The Aji Fantasy Pepper is a productive Capsicum baccatum cultivar developed in Finland by Jukka Fatalii. It produces bright yellow, lantern-shaped pods with sweet, citrusy, fruity flavor and low-to-medium heat. Versatile for fresh eating and cooking.
Developed over five years in Finland by breeder Jukka Fatalii of Fatalii Seeds, the Aji Fantasy Pepper is a selected baccatum line emphasizing high yields, exceptional sweetness, and approachable heat. The plants are vigorous and highly productive, often yielding over 100 pods per plant with thick-walled, crunchy fruits that ripen from creamy white or pale yellow to a vibrant bright yellow. Pods measure about 2 inches long with a distinctive squashed lantern or squat top-hat shape and smooth skin. Flavor is distinctly fruity and sweet with bright citrus notes of lemon and lime, sometimes bordering on tropical candy-like sweetness, accompanied by only mild heat that many find snackable straight from the plant. The flesh has 2-3 mm thick walls providing excellent crunch. It excels in fresh preparations where its brightness shines without overpowering other ingredients. The variety traces its ancestry to South American baccatum peppers, including influences from Aji Lemon Drop and Brazilian types, but was refined in a northern European climate for reliability and flavor.
